Oatmeal Banana Cookies

This delicious oatmeal cookie contains less sugar than your typical treat because it’s mostly sweetened with banana.

Organic & Fair-Trade Ingredients:

  • 1 large ripe banana

  • 1-1/2 cups of uncooked old-fashioned oatmeal

  • 3 tablespoons almond/cashew butter (or almond butter)

  • 1 teaspoon cinnamon

  • ½ teaspoon baking soda

  • A couple pinches of sea salt

  • ½ teaspoon vanilla

  • ¼ cup unsweetened coconut

  • ¼ to ½ cup raisins or Enjoy Life chocolate chips

  • Coconut oil for baking

Instructions:

  1. Heat oven to 375 degrees.

  2. Mash banana in a bowl.

  3. Add oatmeal and almond butter, mixing until smooth.

  4. Mix in cinnamon, baking soda, sea salt, and vanilla.

  5. Add in raisins or chocolate chips. Mix well.

  6. Scoop by tablespoon onto lightly oiled baking sheet and smash flat.

  7. Bake at 375 degrees for approximately 10 minutes, until golden brown.

    Makes about 1 dozen cookies.
