Papaya Berry Boat

Papaya boats with plain Greek yogurt and berries make for a delicious, healthy, and fun treat. The protein in the Greek yogurt helps to balance blood sugar with higher tropical fruits like papaya. Fiber, phytonutrients, and antioxidants make this dish a good choice for kids or adults of all ages.

Ingredients:

1/2 of a large papaya

Plain Greek yogurt or unsweetened high protein plant-based yogurt - about 2/3 cup, depending on the size of the “boat”

Mixed fresh berries, or any fresh fruit you have on hand (I used strawberries, blackberries, blueberries, and raspberries)

Instructions:

Gently cut the papaya in half and clean out the seeds with a tablespoon.

Fill the inner “boat” with yogurt, leaving room for berries or other fruit on the top.

Top with cut fruit of your preference.

Share the other half with a friend or save for later in the refrigerator. Enjoy!
